EASY MACADAMIA AND WHITE CHOCOLATE COOKIES.


A few days ago, friends from Macadamia La Loma sent us some of their products, and since we really like to eat and experience delicious things, we started looking for recipes with this delicious seed.

Due to its mild flavor, its creamy and crunchy texture, and its properties, macadamia is used in haute cuisine and many consider it the queen of nuts. It is rich in vitamin B1 and minerals such as magnesium and manganese. Due to its high content of healthy fats -especially of the Omega 9 type-, when consumed in moderation it can help maintain cardiovascular health.

 

Here we leave you one of the first recipes that caught our attention: some delicious macadamia and white chocolate cookies without flour! The best? They are so easy to make and incredibly delicious.

Ingredients

1 cup of macadamia butter (see recipe at the end)

1/2 cup of brown sugar

1 egg

1 teaspoon of baking powder.

Chopped macadamia and white chocolate

Preparation

 

With a hand mixer, mix the sugar with the egg well.

Add the macadamia butter and baking powder and beat until smooth.

Add the macadamia and chocolate chunks and stir them with a spoon.

Using a 1 1/2-inch scoop, scoop the mixture into small portions on a waxed paper tray, leaving a few inches between them so they don't melt into one cookie.

Bake for approximately 13 minutes or until they start to brown around the edges. They will look like they are not yet ready in the center, but they will gain firmness once they lose the heat. You can do a test with a first cookie, before using all the dough.

For the macadamia butter:

 

Place two cups of macadamia in the processor and process at high speed until the butter is formed.
